1 lbJimmy Dean mild sausage

1 boxTony Chachere's dirty rice mix

6 mdeggs, beaten, fresh farm eggs are good if you can get any

1/2 smVidalia onion, diced

1 smgreen bell pepper, diced

1/2 cfresh mushrooms, chopped
-
2 1/2 cwater

There are other brands of dirty rice mixtures in stores you can use. If you substitute, just make sure to use an 8 oz box (not family size).

1In a large skillet, fry your sausage, onions, peppers, and mushrooms. Then you want to drain your fat.

2Add your eggs and cook until firmly done.

3Add remaining ingredients and stir well.

4Bring to a boil and reduce the heat.

5Cover and simmer for 25 minutes and stir occasionally.
