A hearty dish that has everything you want for breakfast, all in one pan. Potatoes are a hearty base for the onions and peppers on top. Then it's topped with sausages and gently cooked scrambled eggs. This is a German recipe that is meant for breakfast but would make a great lunch or dinner too. We used the Lil' Smokies, but any type of sausage would work. It would just slightly adjust the flavor profile.

Ingredients For bauernfrüstuck (farmer's breakfast)

2 cfrozen cubed hash brown potatoes

3 Tbspoil, divided

1/4 cchopped onion

1/4 cchopped bell pepper (any color)

10Lil' Smokies sausages (or any other sausage you'd like)

4 lgeggs
-
salt, to taste
-
black pepper, to taste
How To Make bauernfrüstuck (farmer's breakfast)

1Fry hash browns in 2 Tbsp of oil in a large skillet until they soften.

2Add onion and bell pepper. Cook a while longer until potatoes begin to brown.

3Slice the little smokies into small pieces and add them to the skillet.

4When potatoes are browned, add another 1 Tbsp of oil to the pan. Crack the eggs into the skillet.

5Stir mixture until eggs are cooked. Salt and pepper to taste.
