Ingredients For baked pork loin chops with apple-pecan stuffing

    thick cut pork loin chops
  • 1 box
    stove top stuffing for pork
  • 2 md
    apples
  • 1/2 c
    chopped pecans
  • 3 c
    chicken broth
  • 3 Tbsp
    wondra
  • salt and pepper
  • 1/2 md
    onion chopped
  • 1 Tbsp
    vegetable oil

How To Make baked pork loin chops with apple-pecan stuffing

    Saute the onion in the oil until soft. While the onions are cooking, core and chop the apples. Add the chopped apples and two cups of the chicken broth to the pan with the onions and bring to a boil. Add the bag of stuffing, stir to blend and turn off the heat. Let the stuffing absorb the liquid. In the meantime, butterfly cut the chops and season with salt and pepper. Spray a baking pan with non-stick spray. Turn on the oven to 350. Add the pecans to the stuffing and mix well. Put the chops in the pan one at a time and add the stuffing to the middle of each chop. Put any extra stuffing in a covered casserole dish and bake with the chops.

    Bake uncovered for 30-40 minutes until the chops read 140 on a meat thermometer. Remove chops from pan and strain the pan drippings. Mix the Wondra with the remaining chicken broth and add to the pan drippings. Bring to a boil. Boil until thick. Pour over chops.
