Ingredients For bacon jam

1 lbgood quality bacon

1 smonion, chopped

4-5 clovegarlic ,minced

1/2 cbrown sugar

1/2 ccoffee

1/4 cmaple syrup

1 Tbspbalsamic vinegar

1 Tbspmustard, grainy
How To Make bacon jam

1Roughly chop bacon and cook in a heavy pot. Transfer to a bowl using a slotted spoon, draining off most drippings. Saute onion & garlic in the pot for 5 minutes until soft and starting to turn brown. Return the bacon to the pan, add the brown sugar, coffee, maple syrup, vinegar and mustard. Cook over medium heat for 1/2 hour, or until deep golden brown and thickened to the consistency of jam.
