This is a Paula Deen recipe. Fabulous meatloaf. I have made a few edits in parenthesis. I normally always make a double batch, then slice and freeze the second meatloaf in individual servings.

Ingredients For bacon cheeseburger meatloaf

1 lbground chuck

10 slicebacon, cooked and crumbled (i use 5 slices)

8 ozsharp cheddar cheese, grated (i use 4 oz)

2 lgeggs slightly beaten

1/4 cbreadcrumbs (i use oatmeal)

1/4 cmayonnaise
-
1 Tbspworcestershire sauce
-
1/4 tspsalt
-
1/4 tspblack pepper
-
1/3 cketchup
-
2 Tbspmustard (i use dijon)

3 ozfrench fried onions
How To Make bacon cheeseburger meatloaf

1Preheat oven to 350 degrees F.

2In a large bowl, combine everything down to the ketchup. Mix well...get in there with clean hands.

3In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

4Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

5You can also make this in mini loaf pans for couples or singles. Be sure to adjust the baking time downward. Bake before or after freezing.
