I love to repurpose leftovers and this time of year we seem to have plenty.I find it is difficult to remember I'm only cooking for two even though its been 11 years since the last one left home.

3/4 cspicy sausage,( i used hot jimmie deans), browned

1 pkgbaby bellas, sliced

1/2 bunchbroccoli
-
1 slicepotatos, chunked, roasted

2 Tbspbutter, melted

2 Tbspolive oil, light

1/2onion, sliced

1Keep in mind these were leftovers so you can play around with the amounts. I sauted the onions and the mushrooms in butter and olive oil.

2When they were mostly cooked I threw in the sausage which was already browned straight from the freezer. The brocoli florets which had not been cooked were added next, after washing and breaking apart.

3I continued to slowly stir and added the pre-roasted potatoes from the frig. Put on the lid and let it continue to cook while I finished the orange ginger cole slaw. I was pleased with the results, knowing it was healthier than the cookies I've been consuming for the last 3 weeks and I didn't waste my leftovers.
