    panko bread crumbs
  • 3/4 c
    melted margarine
  • CASSEROLE
  • 2 Tbsp
    olive oil, divided
  • 3 md
    carrots, chopped
  • 1 lg
    red onion, peeled and diced
  • 2 Tbsp
    steak seasoning, divided
  • 1 c
    shredded Parmesan cheese
  • 1 c
    crumbled bacon bits
  • 6
    fresh boneless pork chops, sliced
  • 10 oz
    frozen chopped spinach, thawed
  • 2 clove
    garlic, minced
  • 1 tsp
    ground cumin
  • 1/2 tsp
    dried oregano
  • 3 tsp
    ground black pepper
  • 1 c
    shredded colby jack cheese
  • 1 c
    shredded mozzarella cheese
  • 1 c
    shredded sharp cheddar cheese

How To Make au gratin pork casserole

    Preheat oven to 375 degrees F.

    In a small bowl, combine bread crumbs and melted margarine, whisk well for 2 minutes until blended. Set aside.

    Coat the bottom and sides of a 9x9-inch baking dish with cooking spray.

    Heat 1 tablespoon olive oil in a large, deep skillet over medium heat. Add chopped carrots and diced red onion, saute for 5 minutes until tender. Season with 1 tablespoon steak seasoning. Remove from heat.

    Spoon into a prepared baking dish evenly. Add shredded Parmesan cheese, crumbled bacon bits and half of topping mixture; mix well.

    Heat remaining olive oil in a medium saucepan over medium heat. Add sliced boneless pork chops and cook for 6 minutes until no longer pink.

    Stir in thawed chopped spinach, minced garlic, ground cumin, dried oregano, black pepper and remaining steak seasoning. Cook completely for 3 minutes.

    Remove from heat. Spoon onto the vegetable mixture in the baking dish evenly. Sprinkle with cheeses and remaining topping mixture.

    Bake for 30 minutes or until the cheese is melted.
