I got this recipe from Weight Watchers, and just had to try it. I don't use the mustard in the recipe because I am highly allergic so I substitute balsamic vinegar for it. My family loves it.

Ingredients For apricot mustard glazed pork roast

3garlic cloves, minced

1 Tbspchopped fresh rosemary or 1 teaspoon dried

3/4 tspsalt

1/4 tspblack pepper

1 1/4 lb lean boneless center cut pork roast trimmed

2 Tbspdijon mustard or balsamic vinegrette

2 Tbspapricot jam
How To Make apricot mustard glazed pork roast

1Preheat oven to 400. Spray roasting pan with nonstick spray

2Stir together garlic, rosemary, salt, and pepper in small bowl, Rub mixture over pork. Place pork in roasting pan and roast 30 minutes.

3Stir together jam and mustard (or balsamic vinegar) in small bowl and brush all over pork. Continue to roast pork until an instant read thermometer inserted in center registers 145 degrees, about 5 minutes longer. Transfer to cutting board and let stand 10 minutes. Cut roast into 12 slices.
