This is a beautiful and elegant chili made with black lentils known as the caviar of lentil's. I'm a southern girl so I had to add some Virginia Country Ham for that down home taste. The addition of champagne and duck makes this a real fine dining experience. The festive colors of this chili are perfect for holiday season. Enjoy! Cooking with Passion, sw:)

Ingredients For 5 star caviar chili

2 cblack lentils, dry
-
1 lbcountry ham, soaked & diced
-
14 ozhalf cooked duck deboned & chopped

28 ozwhite hominy, drained

15 ozdiced tomatoes
-
1/2 ccolorful bell peppers, chopped
-
1/2 canchipotle in adobo sauce, chopped (more or less)
-
11 1/2 oztomato & chili cocktail (or tomato juice)

1/2 bunchcilantro stems chopped
-
2 cangreen chiles, diced
-
1 lgonion, chopped
-
3-4 Tbsproasted garlic, chopped
-
1 1/2 Tbspcumin
-
2 Tbspchili powder
-
1 Tbsporegano, dried
-
1 cchampagne, dry
-
6 cwater
-
salt & pepper to taste
- GARNISHES
-
2 mdavocado chopped
-
1 smred onion, chopped
-
2 mdroma tomato, chopped

1/2 bunchcilantro, chopped

6-8 ozsour cream
-
4-6 ozqueso blanco, crumbled

How To Make 5 star caviar chili

1get ingredients ready
-
2add diced country ham, duck bones, cilantro chopped stems, onions, garlic & 1 1/2 cups of water to a large stock pot. bring to a simmer. cook ham for 30 minutes or until tender

3remove the duck bones from the pot and throw away. add lentils, duck meat and oregano to pot. simmer for 20 minutes. stir frequently

4add remaining ingredients. bring to a boil, reduce heat to medium-low and simmer for 20-30 minutes, until lentils are tender

5garnish and serve
