    12-inch foolproof cauliflower pizza dough, baked
  • 1/4 c
    greek pesto sauce
  • 1 lg
    chicken breast (about 1 cup), poached and cubed
  • 1 can
    (6 oz.) artichoke hearts, rinsed, drained and cubed
  • 2 Tbsp
    sun-dried tomatoes, well drained
  • 2 Tbsp
    shallots, thinly sliced (lyonnaise cut)
  • 1/8 tsp
    red pepper flakes, or to taste
  • 2 c
    sharp white cheddar cheese, grated
  • 1/2 Tbsp
    chopped parsley, for garnish

How To Make mediterranean artichoke chicken pizza

    Preheat oven to 425ºF.

    Spread pesto, leaving about ¼-inch from the edge of the pizza crust. Evenly add chicken cubes, artichoke hearts, sun-dried tomatoes, shallots, red pepper flakes, and cheese.

    Transfer to the preheated oven and bake for 10 to 12 minutes or until the cheese is melted.

    Remove from the heat and let it rest for 5 minutes before adding chopped parsley.
