This is a delicious veggie pizza, so good and nutritious. You can use spelt flour or wheat flour, but spelt behaves more like all-purpose.

Ingredients For black bean and veggie whole wheat pizza

  • CRUST
  • 1 pkg
    dry yeast
  • 1/4 c
    warm water
  • 1 Tbsp
    honey
  • cold water
  • 1 Tbsp
    extra virgin olive oil
  • 1/2 tsp
    salt
  • 2 3/4 c
    spelt flour or whole wheat white flour
  • PIZZA
  • 1 can
    tomato sauce (8 oz)
  • 2 c
    Monterey jack cheese
  • 1 c
    cojita cheese
  • 1 can
    black beans, drained and rinsed
  • OPTIONAL TOPPINGS
  • diced tomato
  • sliced black olives
  • diced bell peppers
  • diced red onion
  • sliced green onions
  • fresh cilantro leaves
  • taco sauce
  • sliced avocado, sprinkled with salt and pepper and tossed in fresh lime/lemon juice to prevent browning

How To Make black bean and veggie whole wheat pizza

    In a large bowl, stir together the yeast and warm water. Add honey and set aside for 10 minutes.

    Meanwhile in a glass measuring cup, combine the cold water, oil and salt. Add the cold water mixture to the yeast and stir in flour.

    Knead the dough on a lightly floured board until smooth and elastic, about 8 minutes. Separate into two separate pieces.

    Put the dough in a couple of lightly greased bowls and turn to coat. Cover loosely with plastic food wrap and let the dough rise in a warm, draft free place for 1 hour.

    Spray two medium pizza pans with cooking spray and roll with a rolling pin or stretch dough and press into place in pans.

    Divide tomato sauce between both pizzas.

    Sprinkle cheeses on top.

    Divide black beans between the two pizzas, sprinkling evenly over the top.

    Sprinkle any other desired toppings over the top of the pizzas.

    Bake in 425 degree oven for 15 minutes.

    Remove from oven and drizzle taco sauce over the top. Sprinkle with fresh cilantro leaves and place a slice of avocado over each slice, if desired.
