I invented this recipe to satisfy my family's love of pasta and zucchini fresh out of the garden. It tastes just like its name and I just had to share this yummy" because it's too good to keep to myself. Everyone raves about this fresh tasting dish and always come back for morë.

Ingredients For zucchini my heart!

  • 1 Tbsp
    olive oil, extra virgin
  • 1 sm
    onion, chopped
  • 2/3 c
    cilantro, fresh
  • 1 md
    red bell pepper or green bell pepper
  • 1/2 Tbsp
    garlic and herb seasoning
  • 1 tsp
    dried basil
  • 1 tsp
    oregano, dried
  • 5 sm
    zucchini, cut into 1/3 in rounds
  • 1 pkg
    turkey sweetitalian sausage cut into 1/2 in. rounds
  • 1 can
    italian stewed tomatoes, broken into smaller pieces
  • 1 c
    sliced mushrooms, fresh
  • 1 can
    24 oz. pasta sauce
  • 2/3 lb
    thin spaghetti, cooked and buttered
  • 1 tsp
    garlic salt
  • 1 c
    sliced dry italian salame, cut in half
  • 2 Tbsp
    freshly grated parmesan cheese for each serving

How To Make zucchini my heart!

    Heat olive oil in large all purpose pan and saute the onion, bell pepper, cilantro , zucchini, italian sausage, mushrooms and all seasonings till sausage is cooked.

    Add the can of tomatoes to the pan( breaking into smaller pieces with fingers). Stir well and bring mixture to a simmer. Cover pan and cook on low 10 minutes for flavors to blend. Add the can of pasta sauce and sliced salame and simmer till well heated. Adjust seasoning and add more garlic salt if desired.

    Plate and add a generous amount of grated parmesan cheese on each serving.
