Ingredients For cheesy shrimp scampi

1 ccrumbled blue cheese

8 ozGouda cheese, shredded and divided

7 ozdry elbow macaroni

2 Tbspavocado oil
-
2 lbmedium raw shrimp, shelled and deveined

1 TbspOld Bay seasoning

1 Tbspminced garlic
-
2 tspcrushed red pepper flakes

1 tspsea salt mixed with black pepper

2 Tbspmilk
-
3/4 cgrated Parmesan cheese
-
2 Tbspmargarine
-
2 chalf and half
-
8 ozcream cheese, softened
-
1 cshredded colby jack cheese
-
1 cpanko bread crumbs
How To Make cheesy shrimp scampi

1Preheat oven to 375 degrees F.

2Coat a 2-quart casserole dish with cooking spray. Add crumbled blue cheese and 1 cup shredded gouda cheese; mix well.

3Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.

4Heat avocado oil in a large saute pan over medium heat. Add shrimps and saute for 5 minutes or until are pink. Season with old bay seasoning, minced garlic, crushed red pepper flakes and sea salt/black pepper.

5Stir in milk and Parmesan cheese, saute again for 3 minutes.

6Meanwhile, melt margarine in a large saucepan over medium heat. Combine half and half, cream cheese, remaining shredded gouda and colby jack cheese, stirring occasionally, until the sauce is thickened and smooth.

7Add cooked macaroni and shrimp mixture; stir well until combined. Remove from heat.

8Pour into a prepared casserole dish. Sprinkle with panko bread crumbs.

9Bake in the preheated oven until golden brown, 20 minutes.
