Ingredients For cheesy shrimp scampi

  • 1 c
    crumbled blue cheese
  • 8 oz
    Gouda cheese, shredded and divided
  • 7 oz
    dry elbow macaroni
  • 2 Tbsp
    avocado oil
  • 2 lb
    medium raw shrimp, shelled and deveined
  • 1 Tbsp
    Old Bay seasoning
  • 1 Tbsp
    minced garlic
  • 2 tsp
    crushed red pepper flakes
  • 1 tsp
    sea salt mixed with black pepper
  • 2 Tbsp
    milk
  • 3/4 c
    grated Parmesan cheese
  • 2 Tbsp
    margarine
  • 2 c
    half and half
  • 8 oz
    cream cheese, softened
  • 1 c
    shredded colby jack cheese
  • 1 c
    panko bread crumbs

How To Make cheesy shrimp scampi

    Preheat oven to 375 degrees F.

    Coat a 2-quart casserole dish with cooking spray. Add crumbled blue cheese and 1 cup shredded gouda cheese; mix well.

    Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.

    Heat avocado oil in a large saute pan over medium heat. Add shrimps and saute for 5 minutes or until are pink. Season with old bay seasoning, minced garlic, crushed red pepper flakes and sea salt/black pepper.

    Stir in milk and Parmesan cheese, saute again for 3 minutes.

    Meanwhile, melt margarine in a large saucepan over medium heat. Combine half and half, cream cheese, remaining shredded gouda and colby jack cheese, stirring occasionally, until the sauce is thickened and smooth.

    Add cooked macaroni and shrimp mixture; stir well until combined. Remove from heat.

    Pour into a prepared casserole dish. Sprinkle with panko bread crumbs.

    Bake in the preheated oven until golden brown, 20 minutes.
