Came up with this on the fly. I don't eat meat so it had to "vegetarian-able" and I think the vegetarian version is way better than meaty stuffed shells.

Ingredients For vegetarian stuffed shells

16large pasta shells
-
2 cricotta cheese
-
1/2 cchopped herbs (thyme, oregano, marjoram)

2 chomemade (or not) tomato sauce [see my yummy tomato sauce recipe]

1 cchopped white mushrooms
-
2 Tbspbutter
-
salt (to taste)
-
pepper (to taste)
-
1/2 cgrated mozzarella cheese
How To Make vegetarian stuffed shells

1preheat oven to 375

2boil large pot of hot water, once boiled, add salt and the pasta shells cook about 20 minutes or until soft

3chop herbs and mix in a bowl with ricotta and a few pinches of salt

4sautee chopped mushrooms in butter, when soft, reduce heat to low and mix in tomato sauce

5in a large pyrex dish, sprinkle olive oil

6drain shells and spoon a heaping tablespoonfull of the ricotta mixture into the shells

7arrange all 16 shells in pyrex dish and pour tomato sauce over them, sprinkle mozzarella cheese on top

8cook for about 10 minutes (check at 8)
