Don't worry about the yolk not being cooked. The heat from the pasta will cook it. Very decandent

Ingredients For two yolk carbonara

  • 4 lg
    egg yolk at room temp
  • 1 c
    grated parmigiano-reggiano
  • 1 c
    grated romano cheese
  • 3 oz
    bacon chopped
  • salt
  • 6 oz
    pasta of choice. i used shells

How To Make two yolk carbonara

  • 1
    Whip 2 egg yolks with the cheese and add some cracked black pepper. Set aside
  • 2
    Cook the bacon until the fat has rendered and the bacon is crisp. Remove from heat and set aside
  • 3
    Bring a large pot of water to a boil and add some salt. Add the pasta and cook until the pasta is al dente. Drain and reserve 1/2 cup pasta water
  • 4
    Add the pasta to the pan with the bacon. Mix 1/4 cup of the pasta water with the egg, cheese mixture. Add the mixture to the pan with the pasta and bacon. Toss adding pasta water a tbsp at at time until a glossy sauce forms.

    Plate the pasta on two plates and top each with the remaining egg yolk

    When ready to eat stir in the egg yolk
