Don't worry about the yolk not being cooked. The heat from the pasta will cook it. Very decandent

Ingredients For two yolk carbonara

4 lgegg yolk at room temp

1 cgrated parmigiano-reggiano
-
1 cgrated romano cheese
-
3 ozbacon chopped
-
salt

6 ozpasta of choice. i used shells
How To Make two yolk carbonara

1Whip 2 egg yolks with the cheese and add some cracked black pepper. Set aside

2Cook the bacon until the fat has rendered and the bacon is crisp. Remove from heat and set aside

3Bring a large pot of water to a boil and add some salt. Add the pasta and cook until the pasta is al dente. Drain and reserve 1/2 cup pasta water

4Add the pasta to the pan with the bacon. Mix 1/4 cup of the pasta water with the egg, cheese mixture. Add the mixture to the pan with the pasta and bacon. Toss adding pasta water a tbsp at at time until a glossy sauce forms.

5Plate the pasta on two plates and top each with the remaining egg yolk

6When ready to eat stir in the egg yolk
