Ingredients For tortellini with mushrooms and prosciutto

18 ozcheese tortellini

3 Tbspolive oil
-
1 lgonion, chopped
-
6 ozprosciutto, chopped

2 Tbspgarlic, minced

1 tspcrushed red pepper
-
1 tspblack pepper
-
1 cdry white wine
-
2 cmushrooms, sliced
-
2 cred bell peppers, chopped
-
1 cgreen onions, chopped
-
1 cfrozen peas
-
1 1/2 cwhipping cream
-
1/2 cfresh parsley, chopped
-
1/2 cfresh basil, chopped
-
1 cparmesan cheese, grated
How To Make tortellini with mushrooms and prosciutto

1Cook tortellini in large pot of boiling salted water until tender but still firm to bite; drain tortellini.

2Heat oil in heavy large saucepan over high heat.

3Add onion, prosciutto, garlic, dried red pepper and black pepper.

4Saute until onion is golden brown, about 10 minutes.

5Add wine and bring to boil.

6Add mushrooms, bell pepper, green onions and peas and simmer until almost all liquid evaporates, about 5 minutes.

7Add cream and boil until sauce begins to thicken, about 5 minutes.

8Add tortellini, parsley, basil and parmesan.

9Simmer until sauce coats pasta, about 4 minutes.

10Season to taste with salt and pepper.

11Transfer pasta and sauce to large bowl and serve.
