Great easy, quick recipe that tastes gourmet! People are so surprised to find out how easy it is to make. Great for a quick lunch. Use Vegetable Broth instead of Chicken Broth to make it vegetarian!

Ingredients For tortellini & spinach soup

  • 1 Tbsp
    butter or margarine
  • 1 lg
    onion, diced
  • 2 clove
    garlic, minced
  • 1 qt
    chicken broth
  • 9 oz
    cheese tortellini
  • salt and pepper, to taste
  • 1 can
    stewed tomatoes ( 14 1/2 ounce can), chopped
  • 1/2 box
    frozen, chopped spinach
  • 1 tsp
    dried basil
  • 1/4 c
    grated parmesan cheese

How To Make tortellini & spinach soup

  • 1
    Melt butter and saute onions and garlic until soft. Stir in broth.

    Add tortellini, salt, pepper, stewed tomatoes, spinach and basil. Bring to a boil.

    Lower heat and simmer for approximately 5 minutes.
  • 4
    Serve and pass parmesean cheese to sprinkle on top.
