Great easy, quick recipe that tastes gourmet! People are so surprised to find out how easy it is to make. Great for a quick lunch. Use Vegetable Broth instead of Chicken Broth to make it vegetarian!

Ingredients For tortellini & spinach soup

1 Tbspbutter or margarine

1 lgonion, diced

2 clovegarlic, minced

1 qtchicken broth
-
9 ozcheese tortellini
-
salt and pepper, to taste

1 canstewed tomatoes ( 14 1/2 ounce can), chopped

1/2 boxfrozen, chopped spinach
-
1 tspdried basil
-
1/4 cgrated parmesan cheese
How To Make tortellini & spinach soup

1Melt butter and saute onions and garlic until soft. Stir in broth.

2Add tortellini, salt, pepper, stewed tomatoes, spinach and basil. Bring to a boil.

3Lower heat and simmer for approximately 5 minutes.

4Serve and pass parmesean cheese to sprinkle on top.
