I love this because it's so simple to make, packed with flavor and can be made even healthier by adding more veggies than tortellinis, the lite dressing, and the turkey pepperoni(did you know turkey pepperoni has only 35 calories, 0 carbs, 2 g of fat, per 8 slices?!) Great for get-togethers...

Ingredients For tortellini salad

  • 1 pkg
    fresh cheese tortellinis (in the fridge section), cooked, drained and cooled
  • 1 c
    cherry or grape tomatoes
  • 1 c
    chopped broccoli
  • 1
    small can of chopped olives
  • 2
    green onions, diced
  • 1/2 c
    grated parmesan cheese, the good stuff
  • some turkey pepperoni, stacked and cut in quarters
  • 1/2-3/4 c
    italian salad dressing (i like ken's steak house northern italian lite)

How To Make tortellini salad

  • 1
    Put all ingredients in a bowl and mix well to coat. Chill for a couple of hrs before serving.
