Ingredients For tomato basil pasta

  • 12 oz
    pasta of choice (curly pasta works well here to carry the sauce)
  • salt
  • 1 Tbsp
    olive oil
  • 4 clove
    garlic, minced
  • 2 Tbsp
    tomato paste
  • salt and pepper
  • 1 tsp
    oregano
  • 1/4 c
    water
  • 3/4 c
    heavy cream
  • 3/4 c
    freshly shredded mozzarella
  • 1 Tbsp
    butter
  • shaved Parmesan, for serving
  • chopped fresh basil, for serving

How To Make tomato basil pasta

    Cook the pasta in salted water. Drain, reserving 2 tbsp pasta water.

    Place the olive oil in a sauce pan. Add the garlic and saute 30 seconds. Add the tomato paste and stir to combine. Add the salt, pepper and oregano.

    Stir in the water and heavy cream. Stir and simmer to reduce a bit and thicken, about 5 minutes. Add the mozzarella cheese and cook until melted and smooth. Stir in the butter.

    Add the pasta water and pasta and mix. Place on plates and top with Parmesan and basil.
