Ingredients For tomato basil pasta

12 ozpasta of choice (curly pasta works well here to carry the sauce)

salt

1 Tbspolive oil

4 clovegarlic, minced

2 Tbsptomato paste
-
salt and pepper
-
1 tsporegano
-
1/4 cwater
-
3/4 cheavy cream
-
3/4 cfreshly shredded mozzarella

1 Tbspbutter
-
shaved Parmesan, for serving

chopped fresh basil, for serving
How To Make tomato basil pasta

1Cook the pasta in salted water. Drain, reserving 2 tbsp pasta water.

2Place the olive oil in a sauce pan. Add the garlic and saute 30 seconds. Add the tomato paste and stir to combine. Add the salt, pepper and oregano.

3Stir in the water and heavy cream. Stir and simmer to reduce a bit and thicken, about 5 minutes. Add the mozzarella cheese and cook until melted and smooth. Stir in the butter.

4Add the pasta water and pasta and mix. Place on plates and top with Parmesan and basil.
