Ingredients For tomato basil pasta

2 cmini penne pasta

1 Tbspolive oil

2 smshallots minced

4 clovegarlic minced

3 Tbsptomato paste

1 1/2 cheavy cream
-
1 tsporegano
-
1 cshredded mozzarella cheese
-
1/2 cgrated parmesan cheese

salt and pepper

1/4 cfresh basil chopped
How To Make tomato basil pasta

1Bring a pot of salted water to a boil. Add the penne pasta and cook for 15 minutes. Meanwhile add oil to a saucepan.

2Add the shallots and garlic and saute until tender. Stir in the tomato paste. Add the heavy cream.

3Add the Mozzarella and Parmesan cheese and cook until melted add the oregano. Drain the pasta reserving 1/2 cup pasta water.

4Add the penne to the sauce and use a little pasta water to help the sauce adhere to the pasta. Taste and adjust for salt and pepper.

5Stir in the basil and serve
