If I had to pick a recipe that was my favorite, it would have to be this one. Given me by a beloved friend, I have made it hundreds of times. Be sure to use the freshest basil and tomato you can find.

Ingredients For tomato, basil and brie linguine

  • 4
    large ripe tomatos, diced
  • 8 oz
    brie cheese, rind removed and diced
  • 1/2 c
    chopped fresh basil
  • 1/2 c
    olive oil
  • 4-6 clove
    garlic...more if you like garlic
  • 1 tsp
    salt
  • 1 tsp
    coarse ground pepper
  • 1 lb
    linguine pasta

How To Make tomato, basil and brie linguine

    Combine first seven ingredients. Stir lightly to combine.

    Let stand for 6 hours at room temperature
  • 3
    1/2 hour before dining, cook linguine al dente. Drain.
  • 4
    Toss tomato mixture with the warm pasta. Let stand 15-20m min. before serving.

    Serve with grated Asiago cheese and warm bread. A meal for the gods.....
