Ingredients For toasted gnocchi with peas

1/4 csalted butter, divided

1 pkg16-oz pkg potato gnocchi

1 Tbspgarlic, minced

2 tspfresh thyme, chopped

1 1/2 creduced-sodium chicken broth

1/2 tspkosher salt

1/2 tspblack pepper

1 pkg10-oz package frozen peas, thawed

2 Tbspfresh flat-leaf parsley, chopped

1 tsplemon zest plus 1 tbsp fresh lemon juice

2 ozparmesan cheese, grated
How To Make toasted gnocchi with peas

1Heat 2 tbsp. of the butter in a large nonstick skillet over medium-high heat; add gnocchi and cook, stirring occasionally, until browned all over - about 10 minutes.

2Add garlic and thyme and cook, stirring often, until fragrant (about 1 minute). Add broth, salt and pepper; bring to a simmer and cook until reduced by about half, 4-5 minutes.

3Add peas, parsley, lemon zest, lemon juice and remaining 2 tbsp. butter. Cook, stirring constantly, until butter melts about 1 minute. Top with parmesan cheese and serve immediately.
