Ingredients For toasted gnocchi with peas

  • 1/4 c
    salted butter, divided
  • 1 pkg
    16-oz pkg potato gnocchi
  • 1 Tbsp
    garlic, minced
  • 2 tsp
    fresh thyme, chopped
  • 1 1/2 c
    reduced-sodium chicken broth
  • 1/2 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 1 pkg
    10-oz package frozen peas, thawed
  • 2 Tbsp
    fresh flat-leaf parsley, chopped
  • 1 tsp
    lemon zest plus 1 tbsp fresh lemon juice
  • 2 oz
    parmesan cheese, grated

How To Make toasted gnocchi with peas

  • 1
    Heat 2 tbsp. of the butter in a large nonstick skillet over medium-high heat; add gnocchi and cook, stirring occasionally, until browned all over - about 10 minutes.

    Add garlic and thyme and cook, stirring often, until fragrant (about 1 minute). Add broth, salt and pepper; bring to a simmer and cook until reduced by about half, 4-5 minutes.

    Add peas, parsley, lemon zest, lemon juice and remaining 2 tbsp. butter. Cook, stirring constantly, until butter melts about 1 minute. Top with parmesan cheese and serve immediately.
