I created this sausage casserole recipe, calling it "Texican" because it's filled with three kinds of sausages from Texas and Mexico: smoked, jalapeno cheddar and chorizo. Hearty penne pasta and a creamy sharp cheddar queso make this so delicious.

1 pkgjalapeno cheddar sausages, cut into 1/2-inch pieces

2 tspred pepper flakes

1 lbdried penne pasta

1 Tbspavocado oil
-
1 lbchorizo sausage, casings removed and crumbled

1 lgvidalia sweet onion, peeled and sliced
-
2banana peppers, chopped
-
1 lbpork smoked sausage, cut into 1/4-inch pieces

1packet taco seasoning
-
1 cshredded extra sharp cheddar cheese
- SHARP CHEDDAR QUESO

1 Tbspmargarine
-
1 cheavy cream
-
1/2 chalf and half
-
8 ozcream cheese, softened
-
1 candiced tomatoes and green chilies, drained

1 cshredded sharp cheddar cheese
How To Make texican sausage casserole

1Preheat oven to 350 degrees F.

2To make the casserole, coat a 9x13-inch baking dish with cooking spray. Add sliced jalapeno cheddar sausages. Season with red pepper flakes.

3Bring a large pot of lightly salted water to boil over high heat. Add the penne pasta and cook until tender, about 9 minutes. Drain and set aside.

4Heat the avocado oil in a large deep skillet over medium heat. Add the chorizo sausages and saute for 5 minutes or until browned and crumbled. Use a slotted spoon to transfer to a large plate and set aside.

5Add the sliced vidalia onion, chopped banana peppers and sliced smoked sausages in same skillet with the chorizo oil. Saute for 6 minutes. Season with taco seasoning. Remove from heat.

6To make the sharp cheddar queso, heat the margarine in a large saucepan over medium heat. Add the heavy cream, half and half, cream cheese, diced tomatoes and green chilies and shredded sharp cheddar cheese. Stir to combine and simmer for 8 minutes until thickened. Remove from heat.

7Add the crumbled chorizo sausages, cooked penne pasta, and the smoked sausage mixture; mix well until combined.

8Pour into the prepared baking dish evenly. Sprinkle with shredded extra sharp cheddar cheese.

9Bake for 30 minutes or until golden brown. Let stand for 10 minutes before serving.
