This makes a simple, but elegant meal when served with a tossed salad. It is a great way to use that little bit of leftover pasta and sauce. It is easy to double the recipe.

Ingredients For stuffed portabella mushrooms

2 lgportabella mushrooms

2 ccooked pasta, divided

1/2 cjarred pasta sauce or your favorite homemade

4 Tbspgrated parmesan
How To Make stuffed portabella mushrooms

1Remove gills and stems from mushrooms. Place on a foil-lined baking sheet. I also make a foil collar for each mushroom (It helps me keep the rest of the ingredients in place)

2Bake for 12 minutes. remove from oven.

3Place 3/4 to 1 cup of pasta on each cap.

4Smother with pasta sauce.

5Sprinkle with parmesan.

6Return to oven for 7 minutes or until heated through and parm is golden brown. Serve.
