Ingredients For spinach stuffed shells

1 pkgfrozen spinach (10 oz.)

1/4 cchopped scallions
-
12 ozlow fat cottage cheese
-
egg substitute to equal 1 egg
-
1/4 cskim milk (optional)
-
1/4 cchopped fresh parsley
-
1/2 tspsalt (or to taste)
-
1/4 tspblack pepper
-
1/4 tspgarlic powder
-
20 lgpasta shells
-
4 cmeatless spaghetti sauce
How To Make spinach stuffed shells

1Cook spinach and scallions in a small amount of water, following the directions on the spinach package; drain.

2In a medium bowl mix cottage cheese, egg substitute, milk (if necessary to thin), and parsley. Add spinach and onion mixture along with salt and pepper and garlic powder. Mix thoroughly.

3Partially boil pasta shells for about 9 minutes and stuff with spinach and cheese filling.

4Spread about 1 cup of the spaghetti sauce on the bottom of a baking dish. Arrange shells in dish and top with remaining 3 cups of spaghetti sauce.

5Cover and bake in a preheated 350-degree oven for 30 minutes. Serve hot.
