Ingredients For spinach lasagna (small)

  • 6
    lasagna noodles
  • 1 - 8 oz. pkg
    steamable chopped spinach, prepared by package directions
  • FILLING
  • 1 c
    cottage cheese, drained and beaten with a hand blender
  • 1
    egg, beaten
  • 1/4 tsp
    dried oregano
  • 1 Tbsp
    fresh chives, chopped
  • 1 Tbsp
    grated parmesan cheese
  • 1/2 c
    shredded mozzarella, mixed into filling
  • 1 c
    shredded mozzarella for layering
  • SAUCE
  • 1-15 oz. can
    crushed tomatoes
  • 1/2
    small onion, grated
  • 4 oz
    mushrooms, sliced
  • 1/2 tsp
    sugar
  • 1/2 tsp
    dried parsley
  • 1/4 tsp
    dried basil
  • 1/2 tsp
    minced or crushed garlic
  • 3/4 tsp
    dried oregano
  • 1/8 tsp
    black pepper
  • 1/4 tsp
    crushed red pepper flakes

How To Make spinach lasagna (small)

    Make sauce - Spray a pan with PAM or olive oil. Saute the grated onion, mushrooms and garlic until soft. Add the rest of the sauce ingredients and simmer for about a half hour.

    Place noodles in boiling water for about 5 minutes to soften. Dry on paper towels. At the same time, steam the spinach according to the package directions.

    Make filling - Combine all filling ingredients until blended, using only 1/2 cup of mozzarella. The remaining cup will be layered when putting the lasagna together.

    Spray a 6.5x8 baking dish with PAM. Cover bottom with sauce. Cut noodles to fit the pan and use the remaining pieces to cover the rest of the layer. Layer cheese mixture, spinach, 1/3 cup grated mozzarella and sauce. Repeat layers. Add last layer of noodles and cover with sauce. Reserve last of the cheese to add at the end of baking.

    Cover with aluminum foil and bake at 350° for 60 - 70 minutes or until bubbling. Remove aluminum foil and and top with the rest of the cheese. Return to oven until cheese is melted.

    Let sit for 10 minutes before serving.
