Ingredients For spinach lasagna roll-ups

12uncooked lasagna noodles

2eggs, lightly beaten

2 1/2 cricotta cheese

21/2 c(10 ounces) shredded part-skim mozzarella cheese

1/2 cgrated parmesan cheese
-
1 pkg10 ounces) frozen chopped spinach, thawed and squeezed dry
-
1/4 tspsalt
-
1/4 tsppepper
-
1/4 tspnutmeg
-
1 jar(26 ounces) meatless spaghetti sauce ( or make your own)
How To Make spinach lasagna roll-ups

1Cook lasagna noodles according to package directions Drain

2Meanwhile, in large bowl, combine the eggs, cheeses, spinach, salt, pepper and nutmeg

3Spread 1/3-cup cheese mixture over each noodle; carefully roll up

4Pour 1 cup spaghetti sauce into an ungreased 13” x9” baking dish
-
5Place roll-ups seam side down over sauce
-
6Top with remaining sauce
-
7Bake, uncovered, at 375 degrees for 20-25 minutes or until heated through
