A spicy macaroni skillet dinner that I found on Muellers. Although the recipe doesn't call for it, you could probably add ground beef (I just followed the original recipe).

Ingredients For southwest skillet dinner

8 ozelbow macaroni

2 Tbspvegetable oil

1 mdonion, chopped

1 mdgreen bell pepper, chopped

2 clovegarlic, minced

2 Tbspchili powder
-
1/2 tspground cumin
-
1/2 tspsalt (optional)

2 14 oz. candiced tomatoes, undrained

1 15 oz. cankidney beans, rinsed and drained

1 11 oz. cancorn, drained

1/2 cshredded pepper jack cheese
How To Make southwest skillet dinner

1Cook and drain pasta according to package directions.

2Heat oil in a large skillet over medium-high heat; add onion, green pepper, garlic, chili powder, cumin and salt; cook, stirring occasionally, for 4 minutes, or until vegetables are tender.

3Add tomatoes, kidney beans and corn; bring to a boil.

4Reduce heat; simmer, stirring occasionally, for 15 minutes.

5Toss with hot macaroni; sprinkle with cheese.
