1/4 colive oil

12 ozfideo pasta

1 mdonion diced

4 clovegarlic minced
-
1 tspeach ground coriander, mexican oregano, and new mexico chili pwder

1bay leaf
-
2 ccrushed tomatoes
-
1 1/2 cchicken stock
-
salt and pepper
-
1 cchopped smoked deli turkey
-
1 ccheddar cheese shredded
-
sour cream and scallions for garnish
How To Make sopa seca ( dry soup )

1Preheat oven 375 degrees. Brush a 9 inch pan with oil.

2Place the olive oil in a skillet and heat it up. Add the fideos and brown on both sides. Transfer to a plate.

3Add the onion to the skillet and cook about 8 minutes. Stir in the garlic, coriander, oregano, chili powder and bay leaf. Cook about 30 seconds. Add the crushed tomatoes and cook about 2 minutes.

4Add the chicken stock and the fideos into the skillet. Season with salt and pepper. Cook for about 5 minutes. Stir in the turkey cook 5 more minutes. Remove the bay leaf.

5Spoon into the prepared pan and top with cheese. Cover with foil and bake about 15 minutes.

6Serve with sour cream and scallions
