My husband created this dish. He wanted something flavorful and easy to fix. This is such a versatile dish, it is a satisfying hearty dish that can be used as an appetizer or dinner. A one-dish casserole easy enough for your husband to make and satisfying enough for everyone to love.

This is a quick easy dish to prepare that is sure to please everyone. I liked the smoky flavor and the creaminess of the cheese/Rotel mix. A perfect recipe for a busy weeknight.

Ingredients For smoky orzo casserole

  • 1 1/2 c
    orzo pasta
  • 8 oz
    Velveeta cheese, cubed small
  • 1/2 can
    Rotel, chili fixins style
  • 1/2 pkg
    little smokies, beef
  • 1/2 c
    white onion, diced
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder
  • 1 tsp
    salt and pepper
  • 10
    Ritz crackers, roasted vegetable flavor, crushed

How To Make smoky orzo casserole

    Cook 1-1/2 C of Orzo in 2 C of boiling water that has been salted until done (9 minutes) Drain and set aside.

    Cut up Velveeta cheese into small bite size cubes and put in a microwave safe bowl. Add 1/2 can of the Rotel chili fixins to it, along with diced onions. Microwave on high for 3 minutes until melted and mix together well. Add salt, pepper, garlic, onion powders.

    Cut up smokies into thirds. Mix into cheese sauce. Add pasta and mix well together and pour into an 8x8 casserole dish that has been oiled. Crumble crackers and spread over top. Bake at 350 for 20 minutes. Serve while hot! Variations: Try other flavors of Lil Smokies in this. You can add diced green pepper and mushrooms if you want more veggies.
