I love shrimp scampi, but the traditional version is way too calorific! This version is more diet friendly. About 6 WW points per serving as written. (You could use rice instead of pasta!)

    fresh broccoli, finely chopped
  • 2 tsp
    olive oil, divided
  • 6 clove
    garlic, grated or minced, divided

  • 1 tsp
    butter

    minced parsley

  • grated parmesan cheese, to serve

How To Make shrimp and broccoli with pasta

  • 1
In a medium pot, boil salted water, then add pasta and broccoli. Cook until pasta is al dente. Drain, save about 1/2 cup liquid.
  • 2
In the same pot, heat 1 tsp of the oil and cook half the garlic briefly, add pasta/broccoli mixture back to pan, and stir all together, adding some of reserved cooking liquid. Turn off heat, cover to keep warm.
  • 3
Melt butter and remaining oil over medium heat in a large frying pan or skillet. Add rest of garlic and sauté briefly - about 30 seconds.
  • 4
Add shrimp, season with salt and pepper. Heat until warmed, if using cooked shrimp. Or, heat raw shrimp until both sides are pink and opaque.
  • 5
Remove shrimp from heat and add lemon juice, lemon zest and minced parsley to shrimp. Stir to mix.
  • 6
Divide pasta/broccoli mixture onto 4 plates. Add 1/4 of shrimp on top of pasta. Pass hot sauce and parmesan cheese for each person's own taste.
