I love shrimp scampi, but the traditional version is way too calorific! This version is more diet friendly. About 6 WW points per serving as written. (You could use rice instead of pasta!)

Ingredients For shrimp and broccoli with pasta

4 ozuncooked pasta, any small variety

3 cfresh broccoli, finely chopped

2 tspolive oil, divided

6 clovegarlic, grated or minced, divided

1/2 tspeach salt and pepper, or to taste, divided

1 tspbutter
-
1 lbshrimp, peeled and tails removed
-
juice and zest of 1 lemon
-
1 Tbspminced parsley
-
hot pepper sauce
-
grated parmesan cheese, to serve
How To Make shrimp and broccoli with pasta

1In a medium pot, boil salted water, then add pasta and broccoli. Cook until pasta is al dente. Drain, save about 1/2 cup liquid.

2In the same pot, heat 1 tsp of the oil and cook half the garlic briefly, add pasta/broccoli mixture back to pan, and stir all together, adding some of reserved cooking liquid. Turn off heat, cover to keep warm.

3Melt butter and remaining oil over medium heat in a large frying pan or skillet. Add rest of garlic and sauté briefly - about 30 seconds.

4Add shrimp, season with salt and pepper. Heat until warmed, if using cooked shrimp. Or, heat raw shrimp until both sides are pink and opaque.

5Remove shrimp from heat and add lemon juice, lemon zest and minced parsley to shrimp. Stir to mix.

6Divide pasta/broccoli mixture onto 4 plates. Add 1/4 of shrimp on top of pasta. Pass hot sauce and parmesan cheese for each person's own taste.
