Ingredients For scallop scampi

  • 4 Tbsp
    butter
  • 4 clove
    garlic
  • 1 md
    onion diced
  • 1/2 c
    dry white wine
  • 1/2 c
    grated romano cheese
  • 1 c
    clam juice
  • 16
    sea scallops
  • salt and pepper
  • 1 lb
    linguine pasta
  • 2 Tbsp
    fresh parsley chopped

How To Make scallop scampi

  • 1
    Cook the pasta in boiling salted water until al dente. Drain
  • 2
    In a skillet add the butter and saute the onion and garlic until translucent. Add the wine and d1/4 cup of the cheese. Add the clam juice and bring to a boil
  • 3
    Add the scallops and boil turning them once for 8 minutes.

    Plate the linguine and pour the scallops and sauce over top and sprinkle with remaining cheese
