My aunt gave me this recipe...and as always, I tweaked it a bit. Great with freshly baked bread sticks.

Ingredients For auntie kathy's sausage tortellini soup

1 lbitalian sausage, hot
-
1 conion, chopped
-
2 clovegarlic, peeled and minced

28 ozcan crushed tomatoes

1 ccarrots, chopped
-
1 cgreen beans, fresh or zucchini (i think green beans have more flavor)

1green bell pepper, chopped
-
2 ccheese filled tortellini (from the pasta aisle, not frozen. better flavor than frozen)
-
6 cbeef stock
-
8 oztomato sauce
-
1 Tbspitalian seasoning
-
1 pinchcrushed red pepper
-
grated parmesan cheese, if desired
-
salt & pepper to taste
How To Make auntie kathy's sausage tortellini soup

1In 5 qt stockpot, brown sausage, remove from heat and drain (I also rinse to remove some of the fat). Sauté onion and garlic until tender. Add all ingredients except for the tortellini and parmesan cheese. Bring to a boil and then lower to a simmer. Simmer uncovered for 60 minutes or until carrots are tender. Add tortellini and simmer uncovered until the tortellini is done (about 10 minutes). Season with salt & pepper to taste. Grate parmesan cheese and add to bowl if desired. Note: you can use broth instead of stock but stock has a richer flavor and about half the sodium.
