I harvested a large number of cherry tomatoes, and needed a recipe to use them. This recipe is able to use as many or few tomatoes as you have. It can also be frozen for use in Winter. This is great as a topping with pasta or with pork or chicken.

Ingredients For roasted tomato sauce

1 qtcherry tomatoes (the more colorful the better)

1 mdonions, yellow, medium thinly sliced (more can be used)

4 clovegarlic +/-
-
pinchsalt
-
pinchpepper
-
dasholive oil drizzled

sprigoregano, fresh chopped

sprigbasil, fresh chopped
How To Make roasted tomato sauce

1Wash tomatoes and slice in half. Place in the bottom of an oven safe pan. Add the onion slices and garlic, Sprinkle with salt and pepper. Drizzle with Olive oil.

2Bake at 350 degrees until tomatoes are brown and bubbly, and the garlic is soft. Add Basil and Oregano bake for another 5 minutes.
