Ingredients For roasted shrimp scampi primavera in a garlic aioli wine sause

1 lbspaghetti, uncooked

1/2 colive oil

2 cveggies of your choice, asparagus, zuccinni , yellow squash, grape tomatoes. or use a combo of all.

1/2 tsplemon peel, grated

2 tspminced garlic
-
1 1/2 lbshrimp, peeled and deveined

1/4 cdry white wine
-
2 Tbsplemon juice
-
1-2 Tbspprepared garlic aioli
-
3/4 tspsalt
-
1/8 tspeach of pepper, and cajun spices if using.

2 Tbspbasil, fresh rough chopped for garnish
How To Make roasted shrimp scampi primavera in a garlic aioli wine sause

1Cook and drain spaghetti as directed on package. NOTE: reserve 1 cup of pasta cooking liquid to use ad needed to thicken the sauce.

2Meanwhile, heat oil in large skillet and saute garlic and lemon peel about 30 seconds.

3Add vegetables and shrimp or you may roast it in a 350 oven for 7 minutes; cook and stir over medium heat until shrimp turns pink (5 to 7 minutes). Add white wine and garlic aioli. stir to coat.

4Sprinkle with lemon juice, salt and pepper, and cajun seasoning if using.

5Stir in basil and parsley.

6Spoon over pasta and toss well.
