Ingredients For quick shrimp scampi

  • 1 lb
    medium shrimp
  • 1/2 c
    butter
  • 1/4 c
    white wine, dry
  • 1/4 c
    chopped flat leaf parsley
  • 1
    chopped shallot
  • 4 Tbsp
    chopped garlic
  • 2 Tbsp
    lemon juice, fresh
  • salt and pepper to taste

How To Make quick shrimp scampi

    Melt butter in large skillet over medium high heat. Then add chopped shallot and sauté until tender 2-3 minutes. Now add garlic and sauté until aromatic about 30 seconds, DO NOT BROWN as this will make the garlic bitter. Add wine and lemon juice and allow to simmer for 2-3 minutes. As the sauce thickens add shrimp and cook for another 2-3 minutes until shrimp are pink. Remove from heat and add parsley, salt, and pepper. Can be served over noodles, rice, or just by it's self.

    For added flavor, you can also through in some Italian seasoning. Also if you want the shrimp to be more evenly spread out, just cut each one in half.
