A creamy pumpkin pasta sauce that goes great over a variety of different pastas. I ate mine with sweet potato gnocchi and loved it!

Ingredients For pumpkin pasta sauce

1/2 canpure pumpkin puree

3/4 canchicken stock
-
1 Tbspolive oil
-
1/2large onion, chopped
-
2 clovegarlic, chopped
-
1 1/2 czucchini, chopped

15basil leaves, chopped
-
1 tspdried rosemary, or use fresh

1 tspgarlic salt
-
1 Tbspgaram masala
-
1 tsporegano
-
4 Tbsphalf & half
-
salt and pepper to taste

pasta of choice
How To Make pumpkin pasta sauce

1In a large skillet, saute onion, garlic, and zucchini in olive oil. Let cook for about 5 minutes.

2Add in pumpkin puree and chicken stock. Cook for several minutes, until the stock and puree are well combined. The sauce should begin to slightly thicken.

3Add in your spices, rosemary, and basil and let simmer for 15 minutes

4Cook your choice of pasta on the side.
