I create this delicious lasagna recipe, using leftover prime rib.

Ingredients For prime rib lasagna

    lasagna noodles
  • 2 Tbsp
    olive oil
  • 6 c
    sliced leftover prime rib
  • 2
    banana peppers, sliced
  • 1
    packet dry onion soup mix
  • 4 tsp
    steak seasoning, divided
  • 1 c
    grated Parmesan cheese, divided
  • 1
    container ricotta cheese
  • 4 oz
    cream cheese, softened
  • 3
    eggs
  • 1 tsp
    garlic powder
  • 2 tsp
    Italian seasoning
  • 1 Tbsp
    steak sauce
  • 2 1/2 tsp
    ground black pepper
  • 8 oz
    colby jack cheese, shredded

How To Make prime rib lasagna

    Cook lasagna noodles according to package directions; drain and rinse in cold water. Set aside.

    Preheat oven to 375 degrees F.
  • 3
    Coat the bottom and sides of an 8-inch square glass baking dish with cooking spray.
  • 4
    Heat olive oil in a large saucepan over medium heat. Add sliced leftover prime rib and sliced banana peppers. Saute for 5 minutes or until are tender.

    Stir in dry onion soup mix, 2 teaspoons steak seasoning and 1/2 cup grated Parmesan cheese. Remove from heat.

    In a food processor, combine ricotta and cream cheese, eggs, garlic powder, Italian seasoning, steak sauce, black pepper and remaining steak seasoning. Pulse until smooth.

    Arrange 3 lasagna noodles in a prepared baking dish. Add half the sauteed prime rib mixture on top of lasagna noodles.

    Spoon half the ricotta cheese mixture evenly on the sauteed prime rib mixture and sprinkle with 1 cup shredded colby cheese. Repeat layers.

    Top with remaining colby and Parmesan cheese. Cover with aluminum foil. Bake for 25 minutes.

    Uncover and bake for 15 minutes or until the cheese are melted. Cool completely for 5 minutes.
