I got this recipe from a fellow employee of Hardwick Stove Company, back in 1980. It's super easy and I love that it makes enough to freeze half for later.

Ingredients For potluck casserole

  • 1 1/4 c
    macaroni, uncooked
  • 1 lb
    ground beef
  • 3 md
    onions, chopped fine
  • 1 Tbsp
    shortening
  • 2 can
    tomato sauce, 8 oz. each
  • 1 can
    chili beans
  • 1 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    chili powder
  • 1 c
    cheddar cheese, shredded

How To Make potluck casserole

  • 1
    Cook and drain macaroni.
  • 2
    Brown beef and onions in shortening; drain.
  • 3
    Add tomato sauce; cook gently 15 minutes.
  • 4
    Add remaining ingredients, except cheese. Mix well.
  • 5
    Pour into 1 large or 2 medium casserole dishes; sprinkle with cheese.

    Bake at 375 for 20 minutes.
  • 7
    This recipe can be halved OR make 2 medium casseroles and freeze one for later.
