Quick, easy, and delicious this beef stroganoff recipe needs to be on your dinner menu rotation. The sauce is creamy and yummy. Ground meat is a great economical substitute for this dish. We served it over egg noodles and it was hearty and yummy... great comfort food dinner.

Ingredients For poor man's beef stroganoff

  • 1 lb
    ground beef
  • 1/2 lg
    onion, diced
  • 1 clove
    garlic, minced
  • 1 can
    mushrooms, 6.5 oz.
  • 1 can
    cream of mushroom soup
  • pinch
    salt and pepper
  • 1/2 pt
    sour cream

How To Make poor man's beef stroganoff

  • Sauteeing beef, onions, garlic, and mushrooms together.

    Saute beef, onions, garlic, and mushrooms together in a little oil until beef is browned and onions are transparent.
  • Can of soup and a little water added to skillet.

    Add can of soup and a little water if necessary (fill 1/2 of the soup can with water); cover.
  • Sour cream, salt, and pepper added to skillet.

    Cook for 5 minutes. Add salt and pepper. Then sour cream.
  • Heating until sauce thickens.

    Heat till the mixture bubbles slightly but do not over heat after cream as been added.
  • Poor Man's Beef Stroganoff ready to be served.

    Serve immediately over rice, noodles or mashed potatoes.
