We love pierogis and this casserole is a modern rendition of a traditional dish. It really tastes like a pierogi. The layers of pasta and potatoes are cheesy and delicious. As an added bonus, buttered onions are mixed into the potatoes and baked on top. Oh my... This is a savory dish that's warm and comforting. Your family will love it.

Ingredients For pierogi casserole

1 lblasagna noodles, cooked
-
10-12medium potatoes, peeled
-
2 mdonions, diced
-
1 1/4 cbutter or margarine
-
2 bagcheddar cheese, shredded (8 oz each)

salt and pepper, to taste
How To Make pierogi casserole

After the casserole comes out of the oven, sprinkle with a bit of cracked pepper and fresh parsley for added flavor and color.

1Cook the noodles according to the package directions.

2Cut the potatoes into equal chunks.

3Add the potatoes to boiling water and cook until tender.

4While your potatoes are boiling, saute the onions in the butter until soft.

5Drain the potatoes. Mash while hot.

6Add the cheese to the mashed potatoes and beat with a mixer.

7Add 1/3 of the onions to the potato mixture and salt and pepper to taste.

8Preheat the oven to 350 degrees F. Generously butter a 9x13 baking pan/dish. Place a layer of cooked noodles to cover the bottom of the pan.

9Spread a layer of potato mixture onto the noodles.

10Repeat, ending with noodles.

11Spoon the rest of the onion over top.

12Cover with foil and place the pan on a cookie sheet just in case the butter runs over the sides. Bake until heated through, approximately 30-40 minutes.

13Optional: I remove the foil after 30-40 minutes, sprinkle more cheese on top, and place back in the oven until the cheese is melted.
