Ingredients For penne with peas & scallops

1 boxpenne pasta
-
1/3 colive oil, extra virgin, divided
-
12 ozbay scallops
-
2shallots
-
1 1/2 cpeas, frozen
-
5plum tomatoes, chopped
-
1 tspsalt
-
1/2 tspblack pepper
-
1/2 cparmesan cheese, grated
-
can add shrimp too! (optional)
How To Make penne with peas & scallops

1Cook pasta according to directions on package. Drain, reserving 1/2 C of the pasta water. Return pasta to pot.

2Heat 2 Tbsp oil in large skillet over high heat. Add scallops & saute 5 - 6 minutes or until cooked; stirring occasionally. Remove from skillet & set aside.

3Heat remaining oil in skillet; saute shallot 1 - 2 minutes. Add peas, tomatoes, salt & pepper. Reduce heat to low; cook 3 - 4 minutes, stirring occasionally. Add reserved pasta water & stir until blended.

4Add tomato mixture & scallops to hot pasta & toss. Transfer to serving platter; sprinkle with parmesan cheese.
