I usually drain about 1/3 - 1/2 of the liquid from the cans of diced tomatoes to avoid the need for corn starch. And I add extra red pepper flakes for extra spicy flavor.

Ingredients For penne a la vodka

2 Tbspextra virgin olive oil

3-4 clovegarlic, minced

2 14.8 ozcans diced tomatoes-with basil, garlic and oregano

1/2 cfresh chopped basil

1/2 tspcrushed red pepper flakes

1 tspeach onion and garlic powder

1/8 - 1/4 cminced onion

1/4 cvodka
-
1 boxpenne pasta
-
3/4 ptheavy cream
-
2-3 Tbspsugar
-
1/4 cshredded parmesan cheese (optional)

2 Tbspcorn starch (optional if sauce is thin)
How To Make penne a la vodka

1Cook penne pasta according to package directions. Drain and set aside.

2In a skillet, heat olive oil over medium heat. Add garlic and onions cooking until tender (1-2 minutes).

3Add cooked garlic and onions to a large sauce pan with diced tomatoes, chopped basil, red pepper flakes, garlic powder and onion powder. Simmer 15 minutes.

4Add vodka and sugar and simmer 15 more minutes.

5Add heavy cream and cook 10 more minutes. If the sauce is thin, add the Parmesan cheese a little bit at a time, and corn starch until the sauce is desired creamy consistency.
