A great friend gave me this recipe many years ago and it is a dinner time staple at my house. Macaroni, parmesan cheese, fresh herbs, garlic and tomatoes make this dish a family favorite !

Ingredients For pasta with white beans and fresh herbs

1 candiced tomatoes, undrained

1onion, diced
-
1carrot, diced
-
2garlic cloves, minced
-
2 Tbspchopped fresh parsley
-
2 tspchopped fresh basil or 1/4 tsp. dried basil
-
1 tspdried oregano
-
1/4 colive oil, extra virgin
-
1 tspsalt
-
1/2 tsppepper
-
2 tspsugar
-
1 can16 oz cannellini beans or white kidney beans, drained

1 cangarbanzo beans, drained (optional) i love them
-
8 ozmacaroni or what small pasta you have on hand

2 Tbspmargarine
-
1/4 cparmesan cheese, shredded

garnish with fresh herbs
How To Make pasta with white beans and fresh herbs

1Drain tomatoes, reserving 1/4 cup liquid.

2Saute onion and next 5 ingredients in hot oil in a large skillet until onion is tender.

3Add tomatoes, reserved liquid, salt, pepper, and sugar.

4Cover, reduce heat and simmer for 10 min.

5Stir in beans; recover and simmer another 10 min.

6Toss cooked macaroni with butter:; top with bean mixture and sprinkle with parmesan cheese.

7Serve immediately with crusty French bread. Garnish as desired, I use fresh herbs.
