A great friend gave me this recipe many years ago and it is a dinner time staple at my house. Macaroni, parmesan cheese, fresh herbs, garlic and tomatoes make this dish a family favorite !

Ingredients For pasta with white beans and fresh herbs

  • 1 can
    diced tomatoes, undrained
  • 1
    onion, diced
  • 1
    carrot, diced
  • 2
    garlic cloves, minced
  • 2 Tbsp
    chopped fresh parsley
  • 2 tsp
    chopped fresh basil or 1/4 tsp. dried basil
  • 1 tsp
    dried oregano
  • 1/4 c
    olive oil, extra virgin
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 2 tsp
    sugar
  • 1 can
    16 oz cannellini beans or white kidney beans, drained
  • 1 can
    garbanzo beans, drained (optional) i love them
  • 8 oz
    macaroni or what small pasta you have on hand
  • 2 Tbsp
    margarine
  • 1/4 c
    parmesan cheese, shredded
  • garnish with fresh herbs

How To Make pasta with white beans and fresh herbs

    Drain tomatoes, reserving 1/4 cup liquid.
  • 2
    Saute onion and next 5 ingredients in hot oil in a large skillet until onion is tender.

    Add tomatoes, reserved liquid, salt, pepper, and sugar.

    Cover, reduce heat and simmer for 10 min.

    Stir in beans; recover and simmer another 10 min.

    Toss cooked macaroni with butter:; top with bean mixture and sprinkle with parmesan cheese.

    Serve immediately with crusty French bread. Garnish as desired, I use fresh herbs.
