Ingredients For pasta with bacon mushrooms and peas

  • 8 oz
    angel hair pasta
  • 6 slice
    bacon
  • 4 c
    garlic minced
  • 1 c
    cremini mushrooms sliced
  • 3 Tbsp
    freshly grated parmesan cheese
  • 3 lg
    egg yolks
  • 1/2 c
    creme fraiche
  • 1/2 c
    frozen peas
  • salt and pepper
  • fresh grated parmesan cheese
  • fresh parsley or basil

How To Make pasta with bacon mushrooms and peas

    Fill a large pot with water. Add some salt and bring to a boil. Add the angel hair pasta and cook until al dente about 15 minutes.

    While the pasta is cooking. Place the bacon in a large skillet and cook until crisp. Remove and set aside. Add the garlic to the bacon dripping and saute 30 seconds. Add the mushrooms and cook about 5 minutes. Take off heat and set aside.

    Place the egg yolks in a bowl and whisk until frothy. Add the creme fraiche, and parmesan cheese. Set aside.

    Place the bacon, mushroom mixture back on the stove and add the peas with a couple of spoonfuls of pasta water. Cook until peas are cooked 3 minutes.

    Drain the pasta reserving a half cup of pasta water. Place the pasta and pasta water into the bacon mushroom mixture. Stir well then over low heat pour the egg mixture over the pasta stirring constantly. Stir in the herbs of choice and serve with more Parmesan cheese.
