Ingredients For pasta fagioli

  • 1/2 lb
    italian sausage, sweet
  • 1/2
    onion, chopped
  • 1/4 c
    red wine
  • 1/2 c
    water, reserved from cooking pasta
  • 16 oz
    plain pork & beans
  • 8 oz
    tomato sauce
  • 14 1/2 oz
    diced tomatoes (fire roasted are best)
  • 1/2 lb
    elbow pasta, cooked
  • 1 tsp
    oregano
  • 1 clove
    garlic, chopped

How To Make pasta fagioli

  • 1
    Cook pasta according to package directions.

    Fry sausage until no longer pink in saucepan. Add onions & fry until translucent. Add garlic and fry 1-2 minutes until fragrant.

    Deglaze the pan with red wine & pasta water. Add beans, tomato sauce & diced tomatoes. Warm through.

    Add pasta & oregano. Simmer until sauce thickens, stirring occasionally to make sure nothing sticks to the bottom of the pot.

    Serve hot topped with Parmesan cheese.
