this is a typical italian main dish.. please note . it is a MAIN dish. NOT A SOUP, like most american people think. i love it .. delicious.

Ingredients For pasta e fagioli

  • 1
    onion chopped
  • 1/2 c
    chopped celery
  • 1/2 c
    chopped carrots
  • 3 clove
    fresh garlic chopped
  • 1 box
    smallpasta shells (16 oz)
  • 1 can
    large can peeled tomatoes
  • 2 can
    cannellini or white northern beans.
  • 1 c
    grated parmesan cheese

How To Make pasta e fagioli

  • 1
    chop all the vegetables .in a large pot saute, in olive oil .pour one can of white beans with liquid. get another half or a little less of other can beans and mash them on a plate with a fork. add to pot. put peeled tomatoes in bleder to chop. add to pot . season with salt and pepper to taste . let it cook at medium heat , stirring occasionally, uncovered . let it cook for about 40 min.

    boil pasta according to pkg directions. cook al dente. drain pasta . add to pot with sauce . mix well. add grated parmesan cheese .mix well again and serve hot . this dish is filling. but sooo good !!!!
