This is by far one of my boys favorite pasta dishes! It is so delicious! I make two pounds of pasta and there literally are no leftovers! It is a must try! Hope you love it as much a we do. Thanks Monica

Ingredients For pasta carbonara
-
1 boxspaghetti, i use multi grain but regular is fine
-
1 pkgdiced panchetta package is 5 oz
-
3eggs
-
1 cparmesan cheese
-
3cloves garlic minced
-
olive oil
-
handful of italian parsley chopped
-
reseserve pasta water
-
salt to season water for pasta
-
salt and pepper to taste.
How To Make pasta carbonara

1Place a large pot of water on and bring to a boil...When boiling put the spaghetti in.

2in a large saute pan/dutch oven add olive oil and when hot add the panchetta and cook until browned

3add the minced garlic and cook a few minutes. Remove from heat until pasta is cooked. In the mean time, crack the eggs in a bowl and beat

4add the grated Parmesan cheese

5when about to drain the pasta, return the panchetta and garlic to the heat. add a bit more olive oil if needed. you want enough to coat the pasta.

6add the pasta to the panchetta pan mix well and cook a few minutes. Remove from heat

7Add the egg and cheese mixture to the pan and mix quickly and well. At this point you will probably need to add some pasta water.

8Add a little at a time, this will help to develop a creamy sauce.

9Add the parsley here, or I wait and add it on the individual dish cause one some doesn't like it. Add more cheese and serve! yum
