Ingredients For orzo pasta w/ asparagus,sun dried tomatoes & feta

  • 16 oz
    orzo pasta, uncooked
  • 1 sm
    red onion, sliced
  • 4
    garlic cloves, smashed
  • 1 bunch
    asparagus, fresh
  • 4 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1/4 c
    sun dried tomatoes, packed in oil
  • 1/4 c
    feta cheese, crumbled
  • salt/pepper to taste

How To Make orzo pasta w/ asparagus,sun dried tomatoes & feta

    Boil pasta al dente ( firm to taste) rinse and set aside.

    in a saute pan, put butter, olive oil on medium heat...add red onions, cut up asparagus, smashed garlic, & sun dried tomatoes, also chopped up

    cook for about 5 mins...till dente

    add to drained Orzo and combine...add salt & pepper to taste...add the crumbled feta and gently combine....can be served warm or cold...yum
