Ingredients For one pot mexican pasta with sausage and cheese

  • 3 c
    grape tomatoes halved
  • 1 lg
    onion diced
  • 4
    andouille sausage cut into coins
  • 2
    jalapenos seeded and diced
  • 4 clove
    garlic minced
  • 1 lb
    dry spaghetti
  • 1/2 c
    cilantro chopped
  • 2 tsp
    salt
  • 1 tsp
    black pepper
  • 6 c
    water
  • 1 c
    sour cream
  • 1 c
    shredded oaxaca cheese or mozerella

How To Make one pot mexican pasta with sausage and cheese

    Reserve half the tomatoes and cilantro and set aside.

    Place all ingredients except sour cream and cheese in large pot. Cover and bring to a boil. Once boiling uncover and continue to cook until most of moisture in gone and spaghetti is cooked. Stir in the sour cream and cheese. Cook until cheese melts.

    Stir in the reserved tomatoes and cilantro. Top with more sour cream for serving (optional)
